Tahini Dressed Delicata Squash with Caramelized Onion and Fried Golden Raisins
The perfect side dish for your holiday table.
Raise your hand if you get tired of squash during the fall. If you find yourself raising your hand to this question it’s probably because you’ve never had it jazzed up this way. Squash, which delicious, can get boring if you don’t season and dress it right. So when I created this recipe, I knew I wanted to tip and dress the delicious and tender delicata squash with flavors that are sweet and tangy and quick to pull together. This dish is great because it’s simple to make but looks and tastes incredibly elegant and refined. It’s the perfect addition to your holiday tables, if you ask me.

Yield: 3-4 servings
Ingredients
For the roasted squash
1. 2 delicata squashes
2. 2 tbsp olive oil
3. 1/2 tsp salt
4. 1 tsp black pepper
for the tahini sauce
1. Juice of 1 1/2 large lemons
2. 1/4 cup tahini paste
3. 2 cloves of garlic crushed
4. 3 tbsp cold water (depending on desired consistency)
5. 1 large pinch kosher salt & good grind fresh black pepper
additional lemon, quartered (optional)
for the topping
1. 1 large onion, thinly sliced
2. 3 tbsp olive oil
3. 1/4 cup golden raisins
Method
Preheat oven to 425F.
1. Slice the delicata squash into rings. Using a spoon, scoop out the pump and seeds and set the seeds aside if you want to roast them for a snack later on!
2. In a large bowl, combine the squash, olive oil, salt and pepper. Toss with your hands or a wooden spoon so that everything gets evenly combined. Place each ring onto a cookie sheet prepped with parchment paper ensuring that each squash ring is laying flat.
3. Place into your preheated oven and bake for 45 minutes. Flip the squash over half way through to ensure each side gets a caramel color. When everything is golden brown and fork tender, remove from oven.
5. Prepare the tahini sauce by mixing the tahini paste with the salt, lemon juice, garlic, and water to thin it out. Whisk together the tahini sauce to ensure it’s fully combined.
6. While the squash roasts in the oven, heat a skillet with 2 tbsp olive oil and caramelized the onions. Start the temperature on high until you get a color to the onions and then drop it to medium low allowing them to become soft and tender without burning. Remove from skillet and set aside until you’re ready to top the squash.
7. In the same skillet you caramelized your onions, add an additional 1 tbsp of olive oil and heat. Add the golden raisins and stir constantly for 3-4 min minutes or until the raisins develop a color and become puffy and tender. Remove immediately from the heat as they will continue cooking.
8. Once you remove the squash from the oven, drizzle the tahini sauce over the hot squash, top generously with the caramelized onions and fried golden raise and enjoy!
