Crumbly Petits Four Cookies
There are some things that you remember from your childhood that really leave a distinct memory. For me its the smell of these deliciously delicate, sweet and crumbly Petit Four cookies baking in the oven.
We could hardly wait for them to finish baking and cooling so we could fill them with the jam (or chocolate hazelnut spread in my case) and dust them with confectioners sugar. i feel passionately that these are just so much better than the American style sugar cookies. Cross my heart. The best part about this cookie is that it’s incredibly simple and doesn’t take the same amount of fridge time as the traditional sugar cookie.
Total time: 45 minutes
Ingredients:
1. 2 cups all purpose flour
2. 2 cup confectioners sugar
3. 1 cup softened unsalted butter
4. 1 egg at room temperature
5. 2 tsp cinnamon
6. 1/2 tsp baking powder
7. 3 tbsp mik
8. 1 tsp vanilla extract
Method:
1. In a large bowl sift together your flour, sugar, baking powder and cinnamon.
2. Add your softened butter & vanilla to your dry ingredients and by hand, work the dough together by gently working the butter into the dry ingredients. Once you have a crumbly mixture, add your egg and continue to mix until combined. Do not overmix your dough or you risk losing the flaky, crumbly nature of the cookie.
3. Once your egg is combined into the dough, mix in your milk, one tablespoon at a time, until your dough comes together. Keep in mind that you may need slightly more or less milk depending on the type of flour so do not add all of the milk at once
4. Form a round ball and refrigerate, covered, for 20-45 minutes.
5. Preheat your oven to 350 degrees Fahrenheit.
6. Remove dough from the refrigerator and place between two pieces of wax paper and roll to about 1/2 thick.
7. Use your favorite cutters and cut your cookies keeping note to attempt to create an even amount of cookies so you can have exact pairs for sandwiches.
8. Place your cookies on parchment lined baking sheets and bake for 7-8 minutes or until the tops begin to get a light golden color.
9. Remove from the oven and let cool. Fill with your favorite jam or Nutella, dust with powdered sugar and enjoy with a hot cup of tea!
