Mango Tahini Salad Dressing [Dressed Summer Salad]
Mangos are an iconic part of the beginning of summer
When i think of mangos, i think of myself halving it and scooping out the sweet, delicious flesh with a spoon. Juices dripping all down my arms and not a care in the world. (In this perfect memory i’m like no older than 7 because remember i said i had no care in the world.)
But on a serious note, i absolutely crush mangos with a spoon and all of its juicy glory but as i’ve grown up i’ve learned that there’s so many other delicious things one can do with mangos. Such as SALAD DRESSING. Yes, you read that right. Salad dressing. I’m not going to say i’m a genius for this delicious dressing combo, but i may or may not be a genius. You decide for yourself.
The sweetness from the mango and the richness of the tahini is literally iconic. And then you go ahead and add in some savory soy sauce and aromatic garlic and ginger and WOW. What a match made in freaking summertime salad heaven.
This recipe is amazing because it makes way more than you need for a single salad. So i always keep it in a jar and eat salads for lunches throughout the week. The dressing perfectly entices me to load up on my salads. How can you NOT crave a salad when it’s smothered in this sweet and savory rich dressing. This salad would be AMAZING with some grilled shrimp or chicken, as well so go ahead and add that if you please!

Yield: 4-5 servings
Ingredients:
dressing
1. 1 cup mango purée (fresh or frozen cubes that have been pureéd)
2. 1/2 cup soy sauce
3. 1/4 cup tahini
4. Juice of 1 lemon
5. 1 tsp grated ginger
6. 3 cloves garlic
7. 1/4 cup extra virgin olive oil
8. Fresh cracked black pepper
salad
1. 1 head of lettuce, chopped
2. 3 cups kale, chopped
3. 3 radishes, thinly sliced
4. 2 cups cherry tomatoes, chopped in half or 2 large tomatoes, diced
5. 1 green bell pepper, thinly sliced
6. 3 green onions, diced
7. 1 cucumber, sliced
8. 1 avocado, cubed
9. 1/4 cup dried cranberries
10. 1/2 cup pecans
11. croutons
12. crumbled blue cheese
Method
1. Prepare your dressing first by blending all ingredients together using a blender or an immersion blender. Ensure the dressing is very smooth in consistency and no large chunks of garlic remain.
2. Chop, dice and shave all of your salad ingredients. You can cut them to any size you prefer.
3. Dress the salad with your mango tahini dressing and top with croutons and crumbled blue cheese. Serve and enjoy!
