Peachy Coconut Puffs
Is there anything better than a pastry dessert that can be thrown together in the matter of minutes? I don’t think so.
I’ve hosted enough parties, dinners and surprise visitors to know that sometimes, it’s okay to not make the most complicated dish. I’m guilty of “going all out”. Surprise guests? Oh dear, let me just whip up a quick batch of French Macarons.” I had to tell myself, “Stop. just stop, Rania.” I noticed, time and time again, that my guests were more impressed with my ability to pull a dish or dessert together quickly and without too much fuss. Read: less is more. So for those of you who are looking to throw together a quick but INCREDIBLY delicious pastry for breakfasts, brunches, tea-time, just because, etc, etc, this right here is for you. Loaded with delicious fresh fruit that gets just a tad bit caramelized in the oven, cinnamon that makes magic when it touches the coconut, and buttery puff pastry. It just doesn’t get better than this.

Total time: 20 minutes
Yield: 10 individual serverings
Ingredients:
1. 10 pieces of puff pastry (5” squares)
2. 1/2 cup melted butter
3. 1 cup of peach or apricot jam
4. 5 fresh peaches sliced thinly
5. 1/4 cup granulated sugar
6. 1 cup unsweetened, shredded coconut flakes
7. 1 tbsp ground cinnamon
Method:
1. Pre-heat oven to 375 degrees Fahrenheit
2. Set out frozen puff pastry to thaw on counter for 1 hour before you plan to use it, but be sure to keep it in the packaging so that the air does not dry the sheets out.
3. Once the sheets have thawed, lay them out individually on a parchment lined baking sheet with about 3 inches of space in-between them.
4. Generously butter the puff pastry pieces on the tops with a pastry brush. This will allow the pastries to crisp up and change color to the perfect golden brown that we all love in pastries.
5. Spread the jam down the center of the puff pastry and lay the peaches over it so that they are slightly touching, you can arrange the fruit however you like, but I noticed that this method allows you to have some peach in each bite (which is obviously important!)
6. Sprinkle a pinch of granulated sugar on top of the peaches.
7. Sprinkle coconut flakes on top of each of the pastries and finish it off with a sprinkle of cinnamon.
8. Bake in the oven for 15 minutes or until the pastries have puffed up and have a nice golden brown color.
