Sumac Spinach Puffs

In the Middle East a popular pastry are spinach pies. These delicious pies are filled and stuffed pockets of soft, fluffy dough with tangy sumacy spinach filling. Here’s my take for those of us that dont have all day to make our own dough and hand fill and stuff these pies.

I think i have a whole other post about how much i love puff pastry because it’s so versatile and easy to use so i’ll spare you the excessive detail here as well, but i really love puff pastry. Here you see a modern twist on a traditional Middle Eastern Spinach pie.

Total Time: 20 minutes

Yield: 10, 5'“ puff pastry squares

Ingredients:

1. 10, 5'“ puff pastry squares

2. 2 cups frozen spinach

3. 1 small white onion, thinly sliced

4. 2 tbsp sumac

5. 2 tsp salt

Method:

1. Pre-heat your oven to 400 degrees Fahrenheit

2. Place your frozen puff pastry squares on 2 parchment lined baking sheets and allow to rest from the freezer for 5 minutes

3. While the puff pastry rests, saute your onions in a hot pan with olive oil until they wilt and become translucent, add your frozen and spinach and allow cook with the onions, then add your sumac and salt.

4. Spread your warm spinach mixture down the center of the puff pastry squares leaving about 1 1/2 inches of space uncovered on each side.

5. Place in oven and bake for 15 minutes or until they puff and crisp up on the outer later and edges.
